One Pot Sausage and Bean Casserole

There are few recipes more comforting than a big, beautiful casserole. This sausage and bean casserole is full of rich, mouth watering flavor and is guaranteed to leave you reaching for that second helping. Serve with potatoes or a few slices of bread and enjoy!

Serves 3

Prep Time: 5 minutes

Cook Time: 1 hour


  • 1 white onion, diced
  • 4 cloves of garlic, diced
  • 1 red bell pepper, diced
  • 1 orange bell pepper, diced
  • 3 tsp tomato purรฉe
  • 2 tsp red chili flakes
  • 2 tsp salt
  • 6 chorizo sausages
  • 5 sprigs of fresh thyme
  • 5 sprigs of fresh rosemary
  • 3 tsp smoked, sweet paprika
  • 2 tsp ground cumin
  • 125 ml red wine
  • 2 (400g) tins of chopped tomatoes
  • 2 tsp crushed black pepper
  • 1 beef stock cube
  • 1 (400g) tin of butter beans
  • 1 (400g) tin of cannellini beans


  1. Add a dash of olive oil to a large saucepan over medium heat and fry the onion, garlic, and peppers with the tomato purรฉe, chili flakes, and a generous pinch of salt. Once the onions have started to turn translucent, after about 5 minutes, add the sausages and cook for another 5 minutes. Add in the herbs, paprika, and cumin and continue to cook for a minute.
  2. Deglaze the pan with the red wine, making sure to scrape all the goodies off of the bottom of the pan. Add the tomatoes, black pepper, and stock cube and simmer for 40 minutes.
  3. Drain the beans and add them to the pot. Cook for another 5 minutes and serve with a slice of fresh bread.
